Angela’s Pumpkin Soup
Yesterday Angela gave me the recipe for her pumpkin soup. It’s easy to make, and tastes supergreat. My flatmates seemed to enjoy it:
a pumpkin
some water
a can of coconut milk
some curry powder
some salt & pepperSlice peel boil pumpkin in water till it’s softilicious
Drain off water
Add coconut milk
Add spices till it tastes good
Simmer away for ages
One small to medium-sized pumpkin made enough for four people
You could also chuck it in the blender after the pumpkin is soft for velvety-smooth soup, but alas flat 4b has no blender at this point. Shannon recommended adding fresh coriander at some stage, and i think a parsley garnish would look pretty. I think perhaps some tiny bits of bacon might make it a bit less homogenous also.

Most things taste better with fresh coriander.
Another nice addition to pumpkin soup is some shredded coconut. It make the coconut milk more tangible and it looks nice. But dont put in too much or you’ll end up with a coconut and pumpkin cake.
